Ingredients:
- 500gr clean and cut tuna in small to medium pieces
- 1 citrus lime
- 5 kedondong or ambarella fruits
- 1 bunch of basil
- Washed banana leaves and sticks
Ingredients to blend into paste:
- 10 cloves of red onions
- 7 cloves of garlic
- 2 cayenne peppers
- 6 small red chilies
- 3 candlenuts
- 1/2 tsp brown sugar
- 1/2 tsp granulated sugar
- Half teaspoon of salt
How to cook Pepes Tuna Kedondong (approximately 1 hour)
- Cut the lime into several pieces then squeeze each one onto the clean tuna. Let the juice seeps through for a couple of minutes
- Peel the ambarella fruits. Julienne them carefully then mix it with the paste.
- Combine the paste and the tuna. Give sometimes for the paste to permeate with the fish.
- Take 2 sheets of banana leaves then pile them up. Place two pieces of tuna. Afterwards, put some basil leaves on top. Wrap it in the banana sheets and secure it with the sticks. Do this step until the rest of the tuna runs out.
- Get the steamer ready and cook for about 30 minutes until it is cooked through.

- 1kg kedondong
- 200gr brown sugar
- 200gr granulated sugar
- 2L water

How to make Spicy Pickled Kedondong (approximately 20 minutes cooking time)
- Peel kedondong then cut them into bite pieces, and wash clean each one.
- Combine water, brown sugar, granulated sugar, and the paste in a pot
- Bring the mix into a boil
- Place the kedondong in a jar of your choice then pour down the pickled liquid

Ingredients:
- 5 kedondong
- 1 teaspoon shrimp paste
- 2 small red chilies
- 2 tablespoons full granulated sugar

How to make Spicy Rujak Kedondong (approximately 15 minutes cooking time)
- Peel kedondong then cut them into bite pieces, and wash clean each one.
